Seriously Amazing Strawberry Scones

This week I made some strawberry scones and posted a picture on Facebook and Instagram and I received many comments and emails asking for the recipe.   So for all my wonderful readers, I decided to make the sacrifice and make more scones today...  you know, so I could take some pictures and write about them!

Certainly not because there were none left and I really wanted more!

So, the back story.  I recently cleaned out my freezer and had two little tiny bags of frozen strawberries left over from our amazing May and June strawberry season last year.  We have a strawberry farm just down the road from us that grows and sells THE BEST strawberries I've ever eaten.  (And I'm not kidding about that.)  And since I had that little bag of strawberries on the brain... and scones on the brain, it just made sense to indulge!

So, here is how I made them!

Into a large glass bowl place: 3 cups flour, 5 teaspoons baking powder, 1 teaspoon salt, 1/3 cup sugar. Mix well and add 2 sticks of chilled butter cut into cubes.

Using a pastry cutter, cut your butter into small pea size pieces.  

Whisk 3/4 cup of heavy cream and 1 egg together in a small bowl...

...and add it to your flour mixture.

I also like to add about 1/4 of a cup of chopped strawberries to the dough.  Since mine were frozen, there was also a lot of juice so I didn't need more than that.  If you were using fresh strawberries, you might want to try to mash them just a little bit to get the juice out... it makes the scones so good!

Mix together until it is looks like this.  Kind of mixed together, but yet crumbly.

Prepare a surface to roll out your dough.  I use a pastry sheet, but you could just use your counter top.  Add a little flour to keep the dough from sticking.

It will be very crumbly.

Use your hands to knead in all the crumbly pieces and form a nice ball.

Roll out the dough to a large circle about 3/4 inch thick.

Using a pizza cutter, cut the circle into about 8 - 12 wedges.  I actually like to cut some smaller wedges for me since I don't eat that much.  

Ha!  Kidding!  (Smile!)   I actually cut small ones for my grand-girls. 

Cover a jelly roll pan with parchment paper and place your scone wedges onto the paper.  Be sure to leave a little distance between them so the edges get crispy!

Bake in a 350 degree oven for about 25 minutes until they are firm and a little brown.

Set them aside to cool and make the frosting.  I do not use a lot of frosting, because I like the sweetness to come from the strawberries.  But I do make enough frosting to drizzle over the berries.  So, I only use about 1 cup of powdered sugar, 1/2 teaspoon of vanilla, and a tiny bit of heavy cream... adding a little more as you stir.  You can also add a tiny bit of strawberry juice if you have it left over from your strawberries.    Mix it all together well; you want it to be a bit runny so you can drizzle it.

Place a few slices of strawberries on each scone and drizzle the frosting over each one.

Serve when they are warm!   But, I won't kid you... they are just as good the next day (if you have any left)!

Have you heard of the Asian Lady Beetle?  

If you saw one you would call it a ladybug.  I mean they look like a ladybug.  But, they are not red, cute or sweet.  They are brownish-orange, ugly and quite horrible.  And you rarely see one, sweet little bug.  You see hundreds upon hundreds.

The above picture is the window sill in our tack and feed shed.  

We've lived here for five years and I've tolerated them because oh, how I love the South.  And our farm.  And our life in the country.  And our lovely home.  But for some reason this spring, when these Lady Beetles are the thickest, they are just about to make me lose my mind.

Every single day, I vacuum.  Floors.  Windows.  Lights.  Because I have become rather obsessed with keeping trying to keep them out of my house.  (Obviously, from the picture above you can tell that I do not vacuum in our tack shed!)

Without doing any research on them,  here is what I know:

They stink.  You don't exactly notice it until your husband is out of town and to make the house not seem quite so big and lonely you decide to close the guest bedroom door... and open it a few days later to the worst rotten potato smell and realize it is the dead Ladybugs all over the floor, and the live ones on the ceiling and the window.

They bite.  You don't really realize this either until you try to brush one off your neck and you feel a strange sting.

They leave a yellow mark on a white wall.

You can vacuum them off the ceiling and 30 minutes later they are back.

And you continually ask yourself these questions:

Where do they come from?

What do they eat?

Why does it seem like they never die, but yet there are dead ones all over the floor every morning?

So, maybe to make myself feel better about them I began to do some research.

If you do a Google Image search on Ladybugs this is what you get:

Oh... don't they just give you a warm, cozy feeling?

But if you do a Google Image search on Asian Lady Beetles this is what you get:

Not so cozy, huh?

I found out all kinds of disturbing facts like this:

They were imported into the United States to help with the Aphid population.  (But there seems to be varying reports on whether they actually eat Aphids.)

They are considered to be one of the worlds most invasive insects.

They make use of pheromones to "call" each other - hence the huge pileups of them that we see everywhere here in Tennessee.

They have very good eyesight and will tend to go right back to where they were removed from.

Studies are being done on what parasite we can import to help eradicate them.  (Hmmmm.  Maybe Aphids?!)

They tend to be very attracted to light colored houses.  (I'm thinking we need to paint our farmhouse black.)

They can get into anything.  There is just about no way to seal a house up enough to keep them out.

They do not die out in cold weather; they find a place to hibernate and the very second the weather warms up in the Spring, they come out in abundance.

The result of all my reading is this:  I don't feel any better about the crazy things.  I actually feel worse.

There Was Joy In Every Stitch

Some of you may remember the post I wrote about a year and a half ago about Baby Grant.   The precious little miracle baby born by adoption to my wonderful young friends, Dennis and Ashley.  (If you want to read it, you can find it here.)

Now two years later, after a miraculous pregnancy, a darling baby girl was born to Dennis and Ashley - and Grant. (On Grant's birthday!!  How amazing is that?!)  

For the last six months of Ashley's pregnancy, I've been dreaming about making a perfectly beautiful baby girl quilt.  I literally spent hours looking online at patterns and fabric, because I wanted this quilt to be just right!

When I found the pattern, I knew it was it!  I ordered the fabric and looked at it for about a month before I finally took the plunge and cut into it!

(For those of you that might be interested, the fabric is Bon Bon Bebe by Robyn Randolph.  The pattern is called Rooftops by Amy Sinibaldi.  And just so you know,  she was the one who came up with the amazing fabric combinations.  I'm a good copier!  However, I did add another full row to the quilt, as well a couple other small changes! )

I have to say that it was sheer joy to make this quilt.  The fabric is the highest of quality and the pattern was just challenging enough that it completely held my interest as I pieced each block together.    The fabric is such a wonderful combination of vintage, retro, and modern.  Absolutely dreamy sweet.

To save time, my original plan was to machine quilt it, but as I was spending hours each day piecing the blocks I knew there was no way I wanted to risk ruining it by quilting it on my machine.  

After the quilt top was complete and laid out with the backing and batting, out came my quilting needle and thread!   I put my thimble on and went to work.  Can I just say that there was joy in every stitch?  My stitches aren't perfect and tiny, but they are my stitches and I loved every one of them.

The crinkly sweetness of a freshly washed quilt just cannot compare to anything!

I debated over what fabric to use to bind it.  After a lot of contemplation and texting pictures to my close girlfriend Luanne, we both agreed that a scrappy binding of the polka dot fabric was the best.  And oh my, how I love it!  

I backed it with numerous large block pieces of fabric pieced together and made a special little tag which I hand-sewed to the back.  (They say one of the worst things you can do is make a quilt and forget to put a tag on it for future generations!) 

Every single stitch on this quilt was worked with happy thoughts and sweet memories!  Little Shelby's Momma means the world to me and I wanted this quilt to reflect that.   

Can I admit that parting with this quilt was hard?  Smile!  I hugged it tight, packaged it up and put it in the mail.    

And then I got these pictures and I just smiled and smiled and smiled!  I couldn't be happier!

Congratulations on your precious baby girl, Dennis and Ashley!  I love you!
